At our restaurant, we've recreated it using a homemade vegan cheese sauce made with sake lees and soy milk, and instead of pasta, we've used chewy Japanese udon noodles! The bacon substitute is a vegan ham made from soybeans, and the egg yolk on top is a homemade, oil-based vegan yolk that recreates the rich look and texture of the real thing.
